High Wire White Wine Rye by Jack Rose

Last November we joined the team at High Wire Distilling to celebrate with them for their 10-year anniversary. We often tell the story of the Jimmy Red corn revival, but there are so many exciting things happening there in Charleston. While crafting one-off experiments they don't have branding for, some of those get made available for single barrels under their Revival label. Recently, Bill from Jack Rose was able to try this must-have. Firstly, the rye used is made with a locally sourced 100% Wrens Abruzzi rye, an heirloom grain grown in the Carolinas for centuries and prized for its hardy backbone and complex nutty flavors. They process the rye in its raw (unmalted) state allowing the rich cereal sweetness of this flavorful grain to shine through. It was then finished in Matthiasson white wine casks for over a year and voilà. 
 
Green grape skins, ripe red fruits, damp soil, grass, and rich turbinado syrup on the nose.
 
The palate is grape skins, light maple syrup, cinnamon, cracked pepper, allspice, hints of menthol, earthy funk, and wafts of smoke, all continuing into a long, luxurious finish.
