The nose is toffee, raw almonds transitioning to candied almond the longer it sits in the glass, sweet dark chocolate, ripe plum, and wafts of chili pepper.
The palate is a myriad of spices: cinnamon, cracked pepper, allspice, and ginger with caramel and soft vanilla notes.
The finish is long with dark chocolate truffle, cigar smoke, and wood chips.
The nose is soft whipped chocolate, tart cherry (skin and flesh), funky, candied grape sweetness, with chocolate malt and butterscotch continuing.
The palate is funky fruits, cherry cola, butterscotch, and perfumed with oak, leather, and chocolate.
Finish is long and leathery with waves of chocolate, caramel, and tobacco leaf throughout.
Highly suggest letting this one open for at least 10 minutes to shake off some heat and spice on the nose. Once you do, you are rewarded with huge viscosity. Fudge brownie, rich musty oak, dried tobacco, root beer candies, rum raisin, and black raspberry chip ice cream most prominent on the nose.
The palate is griping to the sides of the mouth, washing over all the taste buds. Deep oak and rich chocolate begin with a deep berry reduction. There’s no shortage of spice fill out the sips.
The finish is long and slow to fade, never losing the notes found on the palate.
With how high the proof is, this one softens up considerably with a few drops of water. More maple syrup notes draw out, and plenty of deep port fruitiness.
The palate lifts some, not leaving behind the chocolate notes but shifting to milk chocolate with vanilla influence. The oak tames a bit in its attack, but still very present.
As we get closer to the end of the '23 and we recap some of our favorite releases of the year, it is difficult to forget the launch of Bardstown Bourbon Company's Origin Series that kicked off the year. Bardstown Bourbon Co. (BBC) started distilling in 2016. The first Bardstown Bourbon Co. press release I received stated a production capacity of 1.5 million proof gallons (about 23,000 barrels annually) and warehouse space for 185,000. In 2022, BBC produced an estimated 118,000 barrels! They have plans to increase production by 50% by 2024. The growth is incredible to watch. Until this year, all BBC products were sourced or a blend of sourced and their own whiskey. Bardstown Bourbon Co. waited 6-years to release a product that was solely their own distillate. Over the years they've included BBC whiskey into the Fusion Series, and even for the first time in their recently announced Discovery 11. These are extremely popular bottles when available on the site, but for those who have still yet to try the Origin Series we now have the Origin Experience Set that includes samples of all three Origin Series releases. |
After a less than 24-hour sell out of 006 we immediately went back to the drawing board. Our goal was to make this bottle available through the holidays. We think it's one of the best $100 options on the market, but that does no good if it's sold out. Because of that, we bottled 006.1 as a follow-up. Tasting Notes: This is the first bottle I suggest to open for 30 minutes before pouring. The high proof takes a little longer to settle. The nose is candied ginger and orange marmalade. The palate opens with gingerbread cookies, caramel and stewed apples. It's rich and sweet. The palate is viscous and drinks much lower than it's stated 131 proof. On the finish there's a flash of nutmeg, tangerine and toasted oak. Dried spices linger on this long finish.

We're seeing lots of interest in rum again, and some of the most exciting and interesting barrels we've had the opportunity to try have come from the team at Rolling Fork.
We've had a number of great barrels from Rolling Fork even just this year, and today we have an array of exciting releases and finishes that really expand across a lot of the flavor profiles rum can offer. The Jamaica is a bou-rum if I've ever had one. The Brazil is fun to see in amburana being it's also native to Brazil. It's also one of the most unique barrels we've had this year, which is why we featured it today in our 12 Days of Christmas. This rum was distilled by an undisclosed distillery in Trelawny, Jamaica and it is a pure pot still rum aged in a bourbon cask. A bou-rum if I’ve every had one.
The nose is spicy, herbaceous, and rich with sticky date and grape candy sweetness.
The palate is thick and chewy, full of fresh fruits like a bowl of punch spiked with spicy bourbon with dark brown sugar notes.
The finish is long, cooling, and trailing. A fruit medley combined with wintergreen spices.
#EP2011-234056 12-Year Brazil Rum Finished in Amburana & Bourbon 52.06% This rum was aged 4 years in Amburana casks in Brazil and 8 years in bourbon casks. It was distilled by Epris Distillery on a column still from a blend of fresh cane juice and molasses base.
Softly smoked cinnamon roll meets jammy fruits on the nose.
The palate is dense and coating with dark fruit notes: grape, raisin, date, raspberry, all sweetened with a toasty vanilla cream and spiced dark chocolate ganache.
The finish goes back to smokey amburana notes of overcooked cinnamon roll, dark fruits, and dried leather. One of my favorites.

This gem is a 9 year Barbados - aged 8 years in Barbados in bourbon cask, aged one year by Rolling Fork in a Canton low char rye whiskey cask, and then aged 5 months in a french oak Pineau des Charentes cask.
The nose is rich molasses from the start. Light maple, deep waves of dark fruit underneath, and perfectly touched with smokey brown sugar.
Anise pops right away, like a beautiful marinaded jerk chicken. Holiday spices, thick port, and heavily charred vanilla bean.
The finish is long, creamy, and trailing with dark fruit and molasses. The finishing seems to control what could be an overly sweet rum and makes it one of the best experiences of the year.

I truthfully thought we had released all the Starlight single barrels we were going to release this year, but boy was I wrong. I know several of you are probably reading the line "Blueberry Port Finished" and are about to close the email, but I assure you this is one of the best Starlight barrels we've had all year.
The maple finished bourbon is breakfast in a glass. While sweet-forward, this is one of my favorite finishes Starlight does. After 4 years of aging in new, charred American oak, this bourbon is finished in a barrel used for aging maple syrup for several months. If you were ever looking for a bourbon without the burn, this 112.8 proof drinks like a rich 90 proof.
The blueberry port can easily play in your head as a gimmick, but the way the flavors coalesce in this finish is such a testament to what Starlight does so well. Finished for 3-8 months in a Blueberry Port barrel, this falls closer to that amaro, digestif, after-dinner sipper category... and it's fantastic.

My initial gut on ‘maple finish’ would lean sweet forward on the nose, but this one leans more sweet tea and dark brown sugar. Dense, creamy, and inviting. On the palate all the maple oozes forward. Gobs of sweetness, almond croissant, orange slice candies, Belgian waffles baked with crystalized sugar and syrup. The finish is the best part of this pour - the maple soaks into the bourbon and lingers on the palate perfectly. Crispy Belgian waffle and rum-like sugar cane, lightly toasted oak and a huge wave of brown sugar. Starlight #23-2171-1 Blueberry Port Finished bourbon 108.3 proof Deep, romantic, and lightly perfumed: this nose leads with rose infused chocolate, cardamom, and chocolate covered blueberry, raisin, and açaí berries. The palate follows true to the nose, woodsy, and slightly botanical enhancing all the flavors. Rose infused chocolate, expressed orange peel, and brown sugar coated dark fruits. There’s something a bit gin-like about it, or a digestif. The finish is dry, saturating, and incredibly complex. This is a perfect after dinner pour. |

The K. Luke hits keep coming and keep coming - we see multiple sell-outs every time we get a batch in, and the buzz just keeps buzzing. Jonathan and Jennifer Maisano are blending some fantastic whiskey, from their barrel strength offerings to their toasted products and now dipping their feet in a wine finished blend. This blend was put into freshly emptied American and French Oak Keenan Reserve Cabernet Barrels and aged over 6 months.
While every batch we've tried to increase for the demand we are seeing for this product, this will be our first time with this cabernet finish. While we hope there are enough bottles to go around, we don't expect it to be around very long.
Batch 7 Barrel Strength just might be the sweetest nose of the previous batches I’ve had. Big honey and date sweetness, dried cranberries and golden raisin, pops of salted melon fruit, toffee, honey dipped apples.
The palate follows similarly to the nose - lots of orchard fruits and honey. There’s still very much a blast of brown sugar, followed by vanilla coated raspberry, blackberry, and melon. Where past batches have had a larger blast of spice, this time it takes a back seat.
Caramel dipped green apples before a touch of oak, but it’s more balanced in the pour than some past blends have been. Very lively, very fresh.

The nose on the Keenan Reserve Cabernet finish is dense, damp and tannic, a bouquet of fruits just ready to melt into the palate. I’m already smelling what I imagine will be viscous vanilla coated caramels and cordial cherry on first taste.
It clings to the sides of the mouth and coats the entire way. Thick vanilla cream, explosive cordial cherry, jammy oak, and a leathery cocoa are the first wave of flavors to pull out. The finishing doesn’t mask itself, drawing out clove and allspice warmth like a mulled wine combined with rich espresso. The finish continues on with sticky caramel and never forgetting those mulling spices. This is definitely a bottle I’d be reaching for all winter long. This bottle highlights a story I've been pushing for years. Seelbach's emails usually focus on a bottle. This one focuses on the Blender. For Pinhook Artist Series No 3 we take a small detour from the original narrative. I've told Sean Josephs, Master blender at Pinhook, that he greatly underplays his experience and background. Yes, he's a partner at Pinhook and has done their blending since the brand started, but most don't realize how impressive of a background he has. Sean is also too humble for self promotion. Sean's food and beverage career started in fine dining with stints at acclaimed restaurants Chanterelle and Per Se. In 2008, Sean opened one of the first (if not the first) whiskey bars in the country. Today, every city in America has many bars dedicated to Bourbon and American Whiskey. That wasn't the case in 2008 when Char No. 4 opened. To highlight how different things were back then, below is a review from The New Yorker. I too would like to enjoy a third pour of Pappy.

Char No. 4 was followed up by a second restaurant in 2012 called Maysville. Between the two restaurants Pinhook was born! Establishing a bourbon brand in 2010 was a much different game. These were the days no one knew what an Independent Bottler was and MGP was selling aged whiskey for $500/barrel. Since then, they've continued to expand and create unique releases. All while "Pinhooking" their barrels from new distillate to aged whiskey. Because of his unique background in fine dining and wine, Sean has one of the best palates in Whiskey. He's one of a handful of people I know that can build a whiskey blend from the ground up and understand its balance. We're thrilled to offer this release on Seelbach's. For Artist Series No. 3, Pinhook borrowed the “double-blending” technique used in making cognac: Brandy is taken from the barrels, blended, then returned to the barrels for further aging. We first approached Sean from Pinhook about this small batch project in 2021, and it has continued to be a highlight these last few years. This year, we welcome you to join us building the blend in the video above. For this selection, Jay West from r/bourbon and Whiskey Raiders, Sean Josephs from Pinhook and myself (Blake from Seelbach's) assembled in Jacksonville, FL for an in person blend. After the success of the 2021 & 2022 True Small Batch the expectations for the blend increase every year! This selection is to create a special blend for r/bourbon, Seelbach's and Pinhook fans. It's also a way to pull back the curtain on the blending process. Often, distilleries and brands skip over this in their marketing. As I've mentioned before, the blending process may be the most crucial part of having a quality product in a bottle. Here's how we create this blend. For the most part, these blends start the same. We tasted through all six barrels and add 3-4 descriptors to each barrel. These are the building blocks for the blend. This ends up being a mix of notes that say sweet, spicy, fruity, great nose, short finish, etc. The goal of a blend is to highlight the best characteristics while showcasing balance. This blend does just that! It's heavy in dessert and fruit notes. However, those find balance as the whiskey opens up to toasted spices and tannins. A well balanced blend with depth of flavor, with a fantastic price point to boot. A beautiful bouquet of peach cobbler, apple pie, sweet oak and a dash of pepper on the nose. This batch brings me back to 2021 in a fun way, this releases balances sweetness, decadent desserts and fruit. The palate is textured and silky, full of sweet cream, moderate tannin, pleasant peach cobbler, vanilla bean, toffee and brown sugar. Long, well developed finish that blends sweet vanilla, warm brown sugar, pie crust and a hint of pepper and clove. |

That's what I said to Blake when prepping for my email on these Proof & Main releases, specifically when drinking through the Tumblin' Dice Rye.
Proof & Wood is based out of Washington DC and focuses on sourcing and blending. Bottles from their DC series are getting harder to find. Their core business is sourcing and bottling fine American whiskies, but they also import other high-quality spirits from around the world that were not available in the US previously. Founder Dave Schmier is delighted to be able to create both cocktail-friendly bottlings for value-focused bartenders and high-end collectors’ editions for connoisseurs.
This is the 2nd release of The Cabinet - a limited-edition whiskey that showcases the best of their ryes and bourbons. The Cabinet is part of the award-winning DC Collection, including The Senator, awarded the Best American Rye at the 2022 World Whiskies Awards and The Representative, dubbed World’s Best Bourbon, also at the 2023 World Whiskies Awards.
It showcases some intense rye flavors; spices and floral notes waft out of the glass with flavors of dried fruits, nutmeg and mint, complemented by sweetness and full bourbon flavors of vanilla and tobacco. Rich mouth feel and spice complete the flavor experience.
This Tumblin' Dice rye though (to me) is one not to miss, and likely my favorite rye of 2023. I don't just go tossing that around either, there have been some excellent entries from Pursuit Spirits Oak Collection Rye and 15 STARS among others, but this Tumblin' Dice just keeps taking me back to flavors I loved about the first Kentucky Owl Rye.
Big blast of candied herbal and spice: it’s basically an old fashioned in a glass garnished with candied lemon peel. Toasted vanilla, juicy tangerine, minty toffee.
The palate is deep, deep, deep. Rich candied citrus peel, toasted marshmallow sweetness, fresh, damp oak notes, and beautifully balanced.
The linger is long, sugary, and creamy.

Barrel #20200514-4 is a bit more spice forward. The nose is bright with orange peel, mixed berries, and pecan pie crust and filling before a softer maple trailing.
The palate immediately coats every part of the gums, saturated with cooked fruits, spiced cola, dark chocolate, and a plethora of clove, cinnamon, and herbal spiciness dancing on the tongue.
The finish is long and trailing, definitely spiced but never forgetting the brown sugar, caramel, and toasted wood throughout.

It's always exciting to see a project come to life. The Four Gate barrel program started with a call to Four Gate team in the summer of 2020. I was pushing hard for a private barrel. They finally gave in 2021, and in 2022 Four Gate was gracious enough to give us four barrels. We are back for another year with two barrels - a 7 year rye finished in a new toasted Kelvin cask, and a 7 year bourbon finished in a Spanish Oloroso Sherry-Dark Rum cask (which you may be familiar with from their Andalusia Key II.)
The bourbon is stewed raisins and brown butter. This nose combines the dark richness of the Sherry and Rum finishes. It's fruity and spicy. It's like adding a dash of cayenne powder to a fresh plum. The palate is balanced with a touch of sweetness up front. It quickly transitions to dried cherry and an herbaceous note. It's the hint of dried rosemary as the sweeter palate moves to a long finish that makes this bourbon stand out. The finish keeps changing with each sip. Baking spice, cedar and dry cocoa are the most pronounced.
The nose of the rye is decadent. Mulled cider and orange peel open up to roasted sugar cane and chocolate covered cherries. The palate turns slightly brighter with notes of citrus oil, turbinado sugar and clove. The finish is long and warming. The 122+ proof balances nicely with toasted oak, black pepper and Arizona Ice Peach tea.

A few months back we introduced you to Old Route 8. Today, we are back with two of my favorite single barrels, both with great sweetness and oakiness.
Old Route 8 is one of my new favorite products on the market right now. Not just me, I'm seeing lots of folks in various circles with high praise for these barrels. Viscous, great age on the palate, and really hard to put down. It used to be the every day suggestion was Russell's, but with that price now hitting near the $90 range, to me this product hits all the right notes but is currently under the radar. I thought they were tasty at the time of picking, but trying them again bottled really has me excited to get these into your hands. We'll be releasing two at a time, and giving each a name to hopefully more easily sum up what you may experience in the glass.

The northernmost distillery in the contiguous United States, Michael Swanson and Cheri Reese of Far North Spirits make premium, heritage spirits inspired by Minnesota’s character and agricultural abundance. Located just 25 miles from the Canadian border, they are one of only a handful of estate distilleries nation-wide to also grow their own grains.
The Red River Valley Swanson farm has been continuously farmed by Swansons since 1917. It is a thousand acres of jet-black, abundantly rich soil that produces exceptional rye and heirloom corn. Built in 2013, the distillery sits on what was once a wheat field. Michael is a fourth generation Minnesota farmer and the first in his family to marry farming with distilling.
These unique, open-pollinated rye varietals are selected and farmed specifically for their flavor when distilled, a radical approach that is virtually unheard of in the industry. When grown in their unique terroir and distilled in small batches, that potential is realized in a spectrum of rich flavors not found in mass-produced whiskies.
Musketeer was originally bred for use in Western Canada. In the field, it’s taller than most modern varietals and thus more susceptible to lodging, but is still well suited to overwintering in our harsh climate. In the glass, Musketeer carries distinctive baking spice notes like clove, allspice, and sandalwood, carried by stone fruit flavors with apricot and sour cherries.
Hazlet is Far North's flagship varietal, Mike originally seeded AC Hazlet for its ability to overwinter in the harsh Northern Minnesota winter. It wasn’t until the whiskeys came of age a few years later that its true character was revealed: Hazlet has a rich vanilla note, with less of the pepper and spice notes commonly found in rye whiskey. That characteristic vanilla is backed up by almond-like nuttiness and dried fruit notes.
The Hazlet Bonded is one of the first 95% rye whiskeys Mike ever distilled. With age, it has become an exemplary expression of what this flavorful grain has to offer. Leading with sweet caramel and creme brulee with notes of cognac and vanilla caviar.
This is a very limited special release, and we are excited to share these Far North expressions with you.

The Wisconsin blender started their "Dancing Goat Presents" series, experimenting with their 4,500 barrels of uniquely aged whiskey stocks including 16 mash bills with ages ranging from 6-21 years. When it comes to unique, quality releases at a solid price, these bottles are hard to beat. Today, we're releasing their 100% corn whiskey 8-barrel blend aged 8 years and 7 months in once used bourbon barrels and finished for 5 months in cherry bitters barrels.
A few years back, we picked an incredible 7 year 100% corn whiskey finished in Spanish Oak from Dancing Goat, can this one compete?
Cherry, cinnamon, nutmeg, allspice, crème brûlée, and vanilla on the nose. Palate is cinnamon, nutmeg, cherry, sugar, and light winey acidity that gives way to a long silky beautiful finish.

Dancing Goat Maized & Confused Corn Whiskey Finished in Cherry Bitters Barrels
One of the more interesting and often less talked about projects to follow year after year in whiskey is the Vertical Series by Pinhook.
Every year, Pinhook releases a new bourbon and rye, each connected to a promising young thoroughbred. The whiskey in each release is the best expression of their barrels at that moment in time, and they blend and proof releases to be as unique as the horse on the label. The Vertical Series is a one-time opportunity to follow this group of barrels, all filled within months of each other, as they age.
This 8-Year bourbon is the 5th of 9 vintages in the Vertical Series, following this group of barrels as they age from 4 to 12 years old and experience the evolution of flavors over their nine-year journey. These barrels were distilled at MGP in Indiana; aged, blended, and bottled at Castle & Key Distillery in Frankfort, KY, by Pinhook Master Blender, Sean Josephs.
While we did have a Vertical Series Single Barrel Rye not that long ago, we didn't get an opportunity to offer the Vertical Series rye blend because it sold out before we could make it public, but we are happy we managed to get some of this bourbon while we wait for our single barrel bourbon to arrive.

O.K.I. (Ohio. Kentucky. Indiana) was originally started by New Riff Distilling. The sourced bourbon quickly became a cult favorite amongst bourbon enthusiast. After New Riff's own distillate was ready they retired the brand. That was until business partners Chad Brizendine and Jake Warm resurrected the brand in Fall 2020. O.K.I. started by releasing single barrel bourbon to much fanfare, and followed soon after with single barrel ryes and the wildly popular O.K.I. Reserve Batch 01. Batch 01 was one of the best selling products at Seelbach's in 2022, so we're excited today to release their Batch 02 of O.K.I. Reserve. We think this may be just as popular as last year, so for now we are adding a limit of 2 bottles per person.
O.K.I. Reserve Batch 02 is a blend of 3 unique whiskeys from Ohio, Kentucky, and Indiana coming in at 100 proof. 5 barrels of 95% Dark Rye, 5% Malted Rye (Middle West Spirits). 10 barrels of 68% Corn, 20% Rye, 12% Malted Barley (Bardstown Bourbon Co.). 10 barrels of 95% Rye, 5% Malted Barley (MGP).

As we get closer to the end of the '23 and I recap some of my favorite releases of the year, it is difficult to forget the Origin Series bourbons that have held their spots since January.
Bardstown Bourbon Co. waited 6-years to release a product that was solely their own distillate. Over the years they've included BBC whiskey into the Fusion Series, and even for the first time in their recently announced Discovery 11.Every time we've received stock it has moved quickly, and with good reason. These are great, affordable products! We are excited to restock these again, but don't imagine they'll be here long.

The nose is honey grahams, vanilla bean, big league bubblegum, and continuing on with softer, lighter notes of tobacco, cigar box and cream.
The palate follows closely to the nose notes, leading with soft leathery young oak, and complimented with a maple sweetened creaminess. If you’ve ever made homemade vanilla extract, you’ll be comfortable with the sweetness. Not a lot of fruitiness to this blend, just sugar browning pockets.
The finish is where some of the quirky dark fruit funkiness sits, but not overly wild. Nuanced berries, and subtle smoked chocolate.
To me, this is a better version of cigar batch than most of the amburana finished products on the market - a sippable, complimentary whiskey.

A bright bouquet of powdered sugar and grape soda lead on the nose.
Lively, light, and full of fruit notes. Rich and sticky mouthfeel with blackberry, raspberry, and crisp apple begin the sips, while buttercream and grape juice concentrate lays heavy as it sits.
The linger is balanced oakiness with that continuing concentrated grape juice sweetness.

Few brands have made a splash on Seelbach's like Lucky Seven Spirits. They've released fantastic bourbon over the years. Initially, they made a name with their 14-year single barrels, as well as some well-aged small batch releases and finished bourbons like the Holiday Toast and The Frenchman we just got restocks of.
Today, we're excited to release The Hold Up 9 year, 100 proof Kentucky Bourbon. The Hold Up is one of Lucky Seven's original expressions, earning them 92 Points Whiskey Advocate among other Gold and Double gold accolades over the years.
