Are there any pours you still remember 6-months later? For me, this El Dorado cask is that pour. We tried this barrel back in October. It was so special and unique I almost did the tasting notes from memory! Don't worry. We still cracked a fresh bottle for the tasting notes. But, this barrel was so tasty. It was filled with rich notes of demerara sugar and spice. It tasted like a Mexican Coke simple syrup. Even with the sweetness it was balanced by some great herbal and oaky notes. Things like sage and thyme started to pop out as the rum sat in the glass. We were picking several barrels this day. We had no intentions of picking a rum barrel. There are some barrels you can't walk away from. When everyone at the tasting wanted to allocate a case for themselves, I figured we were onto something.
