The Senator is a part of the DC collection from Proof and Wood. Proof and Wood invests in and develops spirit brands. Their core business is sourcing and bottling fine American whiskies, but they also import other high-quality spirits from around the world that were not available in the US previously. I was offered this barrel before our Presidential Dram barrel but declined. We had a lot of rye barrels coming in and I thought it could wait. After Presidential Dram sold out in a few hours I figured it may be worth a try. I'm glad I had the change of heart! We found a winner in the Senator samples. High in acidity and fruitiness. I have tried many ryes with similar characteristics.

Tasting Notes: The nose is soft fruits like raspberry and blackberry. There's a little bit of leather. The structure is held together with layered honey notes. The taste is surprisingly soft at 116 proof. There's more fruit. An interesting not of sweet-tart candy. The finish is herbally. Lots of mint and green tea.
