We welcome the return of Old Soul to Seelbach's. We first found out about this brand a handful of years ago, and have sold several of their other single barrels and TINTYPE series over the last few years. It seems to be a bit of a sleeper bottle, but we've not talked to anyone who has been left disappointed! We are excited to have a Seelbach's single barrel this year.
The first legal distillery in the state of Mississippi, Cathead Distillery was founded in 2010 by friends and blues fans, Austin Evans and Richard Patrick. Located in the heart of downtown Jackson, the distillery has been producing gins and vodkas in addition to their successful line of bourbon under the name Old Soul.
This 6 year, nearly 4 month barrel was distilled in Indiana, with a mash bill of 75% corn, 21% rye, and 4% malted barley. It was aged in a Char #4 Speyside barrel.

- The nose is maraschino cherry juice, vanilla with peach iced tea, creamy almond extract, and lemon pound cake.
- The palate is lively with pepper and peach ice tea, snickerdoodle cookies, continuing with leather and vanilla.
- The finish is medium dry with baking spices aplenty - cinnamon, clove, lasting dark chocolate, and even longer lasting oak.
