Distilled in: Saint Philip Barbados

Blend: Aged 8 years in bourbon casks in Barbados, aged 6 months in sustainably harvested amburana casks previously used to finish bourbon; after aging in the amburana casks, Rolling Fork rotated the rum to 15 year old wheated bourbon casks for an additional one year of aging.

Tasting Notes: The flavor profile is balanced and exceptionally approachable. The rum offers signature Amburana notes of cinnamon and cocoa with a hint of cola, balanced by sweet vanilla and molasses from the rum itself and the toasted bourbon and rye whiskey casks.

About the product: As independent bottlers, Rolling Fork Spirits offers unique expressions of cask-strength rums without additives. Located at Starlight Distillery in Borden, IN, Rolling Fork uses hand-selected used casks and rickhouse aging to develop proprietary flavor profiles in the region synonymous with American whiskey. Rolling Fork crafts distilled spirits that adhere to their motto: no finer spirits can be made.

Cask types Brazilian Amburana oak casks impart exotic notes to aged spirits, including tobacco, cedar and cinnamon. Rolling Fork uses responsibly harvested full Amburana oak casks for this aging (no Amburana oak chips or inserts!) Aging whiskey in Amburana casks can be a challenge. To preserve the character of the rum, Rolling Fork aged the rum for six months in Amburana casks and then racked the rum to hand-selected, low-char, heavy-toast bourbon and rye whiskey casks for additional aging.
