Tasting Notes: If you told me this was a Fall scent of a Yankee Candle, I’d believe it. The nose is decadent caramel, toffee, butterscotch and toasted vanilla, but also has fresh potpourri-like notes of cedar, dried floral, spice, and dried fruits present. The longer it sits in the glass the sweeter it grows, almost more like milk chocolate.
The palate is a balancing act of sweet and spice, giving way to creamy caramel notes but then these deeply toasted oak notes. Where our first DO pick led more Tootsie-roll and dry baking spices, this one is more rich, expansive, and intense. Lots of dried fruits, toffee, and a floral-kissed brightness to an otherwise creamy, toasted maple grounding profile.
The finish is dense and trailing, giving nods to some red fruits here and there but still staying close to the charred oak, toffee, and sweet chocolate tones.
About the product: This limited release bourbon has undergone a unique secondary oak finishing process to develop a rich, nostalgic flavor reminiscent of historic bourbon styles but with an 108 proof kick.
Working in partnership with InnerStave, Pursuit Spirits has created a bourbon that pays homage to the bottles that collected dust for years with distinct notes of butterscotch and creamy caramel.
