Tasting Notes: Velvety red fruits lead the way, with raspberry, strawberry, and red grapes resting against earthy notes of tobacco and roasted chestnuts. The palate ignites your senses with strawberry bubblegum, dried fruit, and toasted sugared pecans. The finish brings a smooth blend of vanilla bean root beer float and baking spices, accented by a touch of clove and a hint of black licorice.
Story: High Wire Distilling is located in Charleston, South Carolina. Founded by husband and wife team Scott Blackwell and Ann Marshall, High Wire Distilling makes small batch spirits distilled in a hand-hammered, German copper still. The company’s flagship product is Jimmy Red, made from 100% Jimmy Red corn sourced from Turnbridge Farm in Darlington, South Carolina. A rare heirloom, Jimmy Red corn is a “varietal that the brand has worked tirelessly to bring back from the brink of extinction."
Having tasted High Wire’s Jimmy Red bourbons over the years and more recently Two Soul’s “Notorious C.O.B.,” we got to thinking it was time to bring the Carolina distillery into our barrel club. Featuring their 100% Jimmy Red corn mashbill, their bourbon features a particular boldness that often features notes of big red fruit, roasted corn notes, and pepper spice.
The Jimmy Red corn that High Wire uses to make their bourbon is made from different farms, but they all get blended together in their standard products. Being a single barrel allowed us to feature a distinct farm that the distillery uses (in this case, Plumfield Farm) and add an extra layer of artisan flair for this release. Their standard release is also currently capped at 4 years old, but this single barrel lands at 6.5 years old, putting it over a year and a half older than the recent Two Souls’ release. Another interesting nugget: this barrel was barreled on New Year’s Eve 2018. We’re thrilled to be working with the good folks at High Wire Distilling and are excited to get this release out to you all.
About: At one time there were only two known ears of Jimmy Red corn remaining. Today, High Wire Distilling Co. grows hundreds of acres of the heirloom corn every year in the pursuit of flavor, preservation, and community.
