Mash bill: 70% Corn 21% Rye and 9% Malted Barley

Tasting Notes: Like the rye the nose is creamy and light, this time with notes of warm cedar and soft cream soda. Underneath the softer aromatics are deeper notes of raspberry truffle and barrel char.

The palate begins plump and warming with fresh,  spiced oak notes before a thick coating of honey to end the sips. Slightly effervescent, cream soda is even more present on the palate than the nose.

The finish is soft and begins to peel away layer by layer - first the spice goes, then the vanillas and oak, leaving a gentle honey sweetness continuing on with long lasting floral, tangerine, and Fruit Stripe gum.

American oak barrels used for finishing are repurposed to produce a delicious, locally sourced, barrel-aged honey. We then return the bourbon to these honey-infused casks for another round of aging to create a distinct and harmonious profile.
