Wilderness Trail Single Barrels
|We're back with two new Rye Whiskey barrels from Wilderness Trail. Wilderness Trail Distillery is now one of the most sought after distillers in the country. They have taken craft distilling to the next level! They're now a "Founding Distillery" on the Kentucky Bourbon Trail. Not bad for a distillery that started in 2013! If you're unfamiliar with Wilderness Trail's backstory, here's how they got started.
After years of working with distilleries around the world to provide advice and fermentation products, we launched our premium craft distillery in 2012 with a focus on making the highest quality Bourbon, Rye Whiskey, Vodka and Bourbon Barrel-Aged Rum. Our founders Shane Baker and Pat Heist are fermentation experts with more than 20 years of experience in the production of alcohol and some of the best brands on the market today. Our specialty is making unique spirits from locally-grown grains to ensure quality, and adding a healthy dose of science in the process. Come see what we mean by visiting Wilderness Trail Distillery.
Wilderness Trail Rye Whiskey - Seelbach's H3
Barrel: 53-Gallon
Proof: 110 proof
Age: 4-Years 10-Months
Bottle Count: 213
Mash bill: 56/33/11 Rye/Corn/Malted Barley
Tasting Notes: The nose is Terry's Chocolate Orange candy. There are notes of cocoa and dried orange peel. The taste is reminiscent of traditional rye with black pepper and allspice. There a slight note of salinity that keeps the whole thing interesting. It transitions or to another long finish. More cocoa. More orange peel. More allspice. This finish makes you want to sit and enjoy each sip. It's a pour that could last a couple of hours as the flavors continue to amplify on the finish.
Wilderness Trail Rye Whiskey - Seelbach's H18
Barrel: 53-Gallon Canton Char #4
Proof: 110 proof
Age: 4-Years 10-Months
Bottle Count: 250
Mash bill: 56/33/11 Rye/Corn/Malted Barley
Tasting Notes: The nose opens up with lemon zest and honey. There's a brightness that allows the nose to shine. While the nose is bright, the taste evolves into something even more complex! There are notes of dill, mineral, oak spice, and a bit of toasted sugar. There's a lot to unpack. It all works well together and transitions to a long finish. The finish lingers with more toasted sugar and oak.
