Patience has never been been easy for me. Especially when I tasted these barrels back in March at 14-years 9-months. I knew I wanted to do something special with these barrels. But, I was pulling a new sample about once a week. There may not have been any bourbon left at that pace. Thankfully, things got busy and there were other barrels and blends to attend to. That was until October when a whiskey friend was in town. We decided to crack into the 15-year+ barrels. We were both blown away at how good they were drinking. He said "you're crazy if you don't bottle these right now!" (thanks for the correct advice Trey). And that's how we ended up with this bottle today.
Story: Barrel proof, ultra aged bourbon is a rare commodity these days. This is Seelbach's first non-finished release. As a bespoke independent bottler we had to make it special. This low-rye bourbon mash bill highlights the elegance of aged whiskey. Enjoy!

Tasting Notes: The nose is golden raisins, white flowers and honey. A punch of black pepper breaks up the sweetness. The palate is baking spice (cinnamon, cloves and nutmeg). Its a ginger simple syrup as it bounces between sweet and spicy. The finish is long! Cigar box and ginger snap cookies.
