Seelbach's 15-Year Batch 002 Story: It's hard to wait on great whiskey. It's also playing with fire when you age more than 10-years. Wait too long and a bourbon becomes over tannic. Pull it early and you may have missed future flavor development. I tasted these barrels back in March 2022 at 14-years 9-months. When we released Batch 001 in November I knew it was special. I feared the barrels would over-oak. They could disappoint after Batch 001. Thankfully, that is far from the truth. We selected Batch 002 last month and it's quintessential Kentucky Bourbon goodness. Rich oak, dried cherries and brown sugar. The bourbon is a walk through a Kentucky Rickhouse.
