Rolling Fork: Heart of Gold | Wheated Wonder
|We're seeing lots of interest in rum again, and some of the most exciting and interesting barrels we've had the opportunity to try have come from the team at Rolling Fork. We had a number of great barrels from Rolling Fork last year ranging from an amburana finished Brazilian rum to a Pineau des Charantes finished Barbados. Today we have two distinct small batch rums, one geared toward mixing and another geared toward sipping.
Heart of Gold was created with cocktails in mind. This blend of four aged rums from Barbados and Jamaica is the key to the best Daiquiri, Rum Sour or Gold Rush you may ever have!
Each of the four lightly aged rums was matched to one of Rolling Fork's bourbon casks for secondary aging, ranging from a few months up to two years.
Proofed to 101, it's the rum that won't over-power, but will over-deliver with the depth it brings to drinks.
The nose is soft stone fruits, expressed orange peel, dried cranberry, honeysuckle, molasses, and slightly smoked baking spice.
The palate is light and airy, sweet-forward with brown sugar, rich berry, and charred oak before creamy vanilla dipped croissant and white pepper notes.
The finish is long, dry, and spiced.
If you are looking for a more contemplative rum, The Wheated Cask Wonder is a small-batch blend of four barrels of rum distilled in Barbados by FSD. The rum was aged for eight years at the distillery in Barbados in bourbon casks. It was then aged for more than two years at Rolling Fork’s Indiana rickhouse in rare, 10-year-old wheated bourbon casks sourced from Frankfort, Kentucky.
The nose is dense and buttery, lots of caramel but a beautiful fragrant oak note has you diving even deeper. Simple syrup, orange peel, and light red fruits.
The palate lays syrupy on the tongue, with warming oak, coconut syrup, and lots of brown sugar. While rich and decadent, there’s balanced nutmeg and white pepper spices to every sip.
The finish is long and creamy, with dried fruits and saturated red fruits continued on with another kiss of aged oak.
