Introducing Release 001 Very Old Goat 21-Year Light Whiskey

What is light whiskey? Light whiskey is a unique type of whiskey that originated in the United States in the late 20th century. It emerged as a response to changing consumer preferences in the 1960s and 1970s, when drinkers began gravitating towards lighter spirits like vodka and gin. To adapt to this trend, the American whiskey industry introduced light whiskey, which is characterized by its lower proof and lighter flavor profile compared to traditional American whiskeys like bourbon or rye. Light whiskey is produced by distilling at a higher proof, between 160 and 190 proof (80-95% ABV), and subsequently aging it in used or uncharred oak barrels. Light whiskey was often used as an ingredient in Blended Whiskey. Thankfully, someone noted the exceptional whiskey inside these barrels and decided to release them on their own!

This multi-year series will feature 16 mash bills with ages ranging from 6-21 years. Composed of multiple vertical series, boundary bending blends, and one-off releases; the Dancing Goat Presents collection will highlight our blending and finishing skills as we patiently wait to share our own aged distillates. The first "Dancing Goat Presents" release will feature a 21-year-old light whiskey. Bottled non-filtered at 126.4 proof, Very Old Goat features notes of syrupy sweet oak, toasty oak, robust caramel, honey, pepper, and light fruit. |
