Whiskey Acres Cask Finished Series: Bourbon Whiskey Finished in Dunn Vineyards Cabernet Casks

We were fortunate to receive freshly emptied Cabernet casks from the award winning Dunn Vineyards on Howell Mountain in Napa Valley. These casks aged 32 months, a year or more longer than most, allowing the introduction of oxygen to slowly finesse the tannins during this prolonged aging. Their casks feature tighter-grained wood but lighter toasting profiles, which do not significantly add flavor to the wines, instead highlighting the purity of the mountain Cabernet, making it a perfect vessel for aging whiskey. So that's exactly what we did by resting our bourbon in those barrels to create the next release in our Cask Finished Series: Bourbon Whiskey Finished in Dunn Vineyards Cabernet Casks.

This 105 proof offering has a nose that is a berry-jam-bomb. Sweet, sticky fruit dominates the nose, with undertones of caramel and custard. The palate showcases the heavy French oak influence with intense notes of mocha and wood spice that overlay with more subtle notes of vanilla pudding and peanut brittle. The finish is long lasting with more wood spice and buttered cornbread.
