Gate Eleven Larkin Bridges Straight Bourbon Whiskey

 54% Corn 34% Malted Barley 12% Rye

Tasting Notes: A complex nose with sweet maple notes followed by pepper and vanilla

About the Product: This bourbon was created using grains sourced from heritage family farm - Batey Farms near Murfresssboro, TN. The grains were mashed and cooked in our old modified Groen steam kettle and then fermented for six days in our 350 gallon fermenter. Next, the beer was twice distilled with an initial stripping run which collected 50 gallons of first pass distillate. Two batches were produced in this way and then the distillates were combined for the second distillation - the spirit run.

Like all of our five still at Gate 11, our pot still is a hand built system which features a hybrid column with nine stages of separation, an intensive copper contacting sectuion and external reflux for full reflux control. A Heads fraction is collected and the heads cut-off is assisted by the use of in-house gas chromotography. A proof-based cut-off determines the end of hearts collection.

Hearts spirits are then proofed down to 120 and transferred to a new charred old barrel and placed in our barrelhouse. We are currently using # 2 and #3 Char levels with 30 or 53 gallon barrels.

Gate 11 Distillery is located in a historic train station and we uniquely use an old boxcar as our barrelhouse. What started out as a neccessity and perhaps a bit gimmicky has proven to be quite fortuitous. The more pronounced daily heat cycle in our boxcar places us firmly in the warm weather whiskey maturation camp of the Texas distilleries. While we have installed ventilation to limit the high heat on summer days, we embrace our boxcar and is heat cycle!
