Mash Bill: 100% in-house floor malted 2-row and 6-row Virginia barley
Malt Notes: Pure Applewood and Cherrywood smoke, approximately 12-18 ppm, light toast
Finishing Barrel: Port Barrel
Finishing process: Barreled with a progressive series of new and used Applewood and oak chips inside used bourbon barrels and finished in port style wine barrels from neighboring wineries.
Proof: 133.5 proof
Tasting Notes: The nose is like opening a fresh cigar box. Cedar, aged tobacco and cocoa. There is a little bit of smoke but it really shines after a splash of water. The taste is dry. It starts to sweeten up with the mid-palate where the port note is apparent. It's dried cherries and chocolate. The finish is long with notes of tobacco and more dried fruit. This one continues to evolve. I've gone back and tasted it three times noting slight differences every time it's in the glass.
