Tasting Notes: The nose starts with a little citrus. There's hints of grapfruit peel that move to caramel, sweet corn and buttered toast. The taste is toasted turbinado sugar with raw dark chocolate. It mixes nicely with a cinnamon note. The finish is long and intense. The heat and oak. It mellows to toasted cocoa and black pepper.

About Starlight: Starlight Distillery is a family-owned distillery in  Starlight, IN. The distillery started out as a family farm in 1940. It's had multiple evolutions over the years. In 1978, the Huber's started their winery. Then in 2000 the Huber's took the next step and received approval to open the distillery. Starlight is farm-focused and produces many single-origin products. I think they're the only distillery I know that is a working farm, orchard, market, tourist destination, winery, banquet hall, and distillery!
