About: From the heart of Starlight’s 700-acre family farm comes a bourbon that is truly farm-to-bottle. Crafted in small batches with estate-grown grains and honey, it begins with a sweet mash process and is double pot distilled on Starlight’s Vendome copper still. The whiskey is a 5–7 year blend of two signature mash bills—one built on corn, rye, and malted barley, the other a softer four-grain with wheat in the mix. Entering the barrel at 108–114 proof and bottled at 106, the bourbon strikes a balance of power and finesse that reflects its thoughtful construction.
The story deepens in the barrel. First aged in new American white oak, the spirit is then finished for 4–12 months in fire-charred and toasted casks that previously held Starlight’s own estate-harvested honey. These hives, pollinated by the farm’s orchards and wildflowers, leave behind a subtle sweetness that laces through layers of oak, spice, and fruit. The result is a whiskey that connects field, hive, and barrel—a limited release where authenticity, heritage, and innovation meet in every pour.
