Barrel: Char #3, 18-month air dried Minnesota oak staves

About: St. Augustine's Florida Straight Bourbon spent its entire life in premium, 53-gallon new oak bourbon barrels from Kelvin Cooperage in Louisville, KY. Staves are seasoned for 18 months prior to coopering bringing enzymes to the surface which creates the ideal levels of tannins and wood sugars during the charring process. Aged in the Florida heat, the bourbon balances the heat and dryness from the barrel with the sweetness from the grain bill. The high percentage of malted barley provide note reminiscent of a single malt.
