The nose opens with wildflower honey, baked blackberry cobbler, cherry cola, charred oak, and sweet leather, all wrapped in a perfumed underpinning of rose petals and vanilla.
The palate is layered and expressive for the proof, beginning with waves of red and purple fruits, followed by buttery caramel, then sweet wood sugars and perfectly complementary spices. As it rests in the glass, the profile deepens, unfolding into enveloping blueberry and black raspberry, mint-kissed vanilla cream, and gently smoked oak accented by a soft, sweet pecan nuttiness.
While the flavors grow darker and richer, a blanket of sweetness carries through to the finish, where lingering notes of black raspberry chip ice cream and root beer float stretch into a long, rich, and mature close.
Story: My dad used to tell me stories about growing up in western Kentucky and working the farms. That wasn’t my experience—but a few years ago, it all came full circle when I saw a truckload of Beyke Farms corn being delivered to a distillery. It might’ve been a small role, but knowing my family had a hand in the whiskey industry was fascinating.
Fast forward to today: working with Seelbach’s has introduced me to whiskeys from all across the U.S., and one thing I’ve become obsessed with is a specific heirloom grain—blue corn.
I’m excited to introduce a well-aged, well-crafted blue corn whiskey, made right here in Kentucky.
