Age: 11-year rum - Aged 8 years in bourbon casks in Barbados, aged 3 years in a seasoned bourbon cask (WTRB) for 3 years by Rolling Fork.
Source: Distilled in Saint Philip Barbados; Blend of pot and column rum from molasses
Proof: 115.2 proof
Tasting Notes: The nose screams whiskey enthusiast. You get some of the sweet, custardy, vanilla forwardness that come in higher corn mash bill bourbons leading the way, but then layers of rick house funk, perfumed fruitiness, and juicy citrus oleo. Beautiful and inviting.
While sweet toned, this one has so much depth and structure to it that you could convince me it was a finished bourbon. It leads with creamy vanilla and caramel, but still packs a lot of the citrus that the nose had, and even draws them forward more on the nose. The best part about it is how fruity it is combined with this great barrel char note that keeps the traditional rum sweetness in check.
The finish lingers with molasses, ginger snap cookies, tobacco, leather, charred oak, and a little herbal more akin to angostura bitters in the long finish.
No additives, non-chill filtered and bottled at cask strength.
