Pinhook Single Barrel 7 Year 118 Proof - Selected by Seelbach's
Mash Bill: 75/20.5/4.5 Corn/Rye/Malted Barley
Proof: 118 proof
Bottles: 174 bottles
Tasting Notes: The nose opens with toffee and sugar cookie. This sweetness is quickly balanced by nutmeg and pepper. It's a nice, classic bourbon nose. But, then comes the palate! Caramel and butterscotch are the first notes I get. It has some notes similar to dusty National Distillers bourbon. It's a buttery mouthfeel even at 118 proof. That moves to a dried sage and raw dark chocolate finish.
Story: Most are probably familiar with the Pinhook Vertical Series. This is the single barrel program within the Vertical Series. Every year Seelbach's is allowed to select a barrel from the corresponding Vertical age statement. This year we selected from a 7-year-old bourbon. If you're unfamiliar with the Vertical Series please see the information below.
The Bourbon Vertical Series is a unique opportunity to follow a group of 1,350 MGP bourbon barrels as they age from four to twelve years, and experience the arc of flavors throughout the nine-year journey. Every year, Pinhook selects 150 bourbon barrels from the lot and blends and proofs them to create the most balanced expression of the whiskey at that age. The Vertical Series began with the inaugural 4 Year release in 2019, and the journey continues through annual releases up to age 12. The Rye Vertical Series began in the spring of 2020.
