Tasting Notes:
Nose: Cherry, red apple skins, hot chocolate powder, white pepper & cinnamon bark
Palate: Jalapeño pepper skin, raw cacao, long, spicy finish
This selection was done by Aaron Goldfarb and Robert Simonson.
Tasting Process: We started with 8 samples ranging in age and rye varietal. When selecting barrels I usually look for two categories. Something completely unique and off-profile or the flagship product on steroids. At the end of the tasting we were left two barrels. One that was off-profile(#379) and the other a Ragtime on steroids (#417). Thankfully, we were able to grab them both!
