Their owner, Pablo Moix, has graciously agreed to bottle an entire barrel of specially-branded PS107 whiskey specifically for the Auction Gala 2025. This limited edition release is a one-of-kind straight bourbon whiskey bottled at cask strength. The unique label artwork is from PS 107 mom Kate Wilkes Polevoy, depicting our newest addition (and residents) to the school: the chicken coop. Only around 180 total bottles will be available. 100% of proceeds after bottling costs will be donated back to the school; last year that generated nearly $7,000!
