Age: 5-Years 10-Months
Proof: 120.4
Mash bill: 64/14/14/8 Corn/Wheat/Rye/Malted barley
Tasting Notes: The nose opens with fruity butterscotch, vanilla bean ice cream, and custard, all lifted by bright orange peel. With more time, it deepens into darker notes of raisin, date, and oatmeal cream pie that linger longer in the glass.
The palate is rich and layered. Sweet butterscotch and honey coat the front, before shifting into black pepper and vanilla at mid-palate. From there, tropical fruit cocktail and sweet oak emerge, giving a lively contrast.
Texture and mouthfeel define the finish, dense and creamy, reminiscent of High Wire’s Jimmy Red but with added spice and earthiness. As it grows drier, jammy fruits, tobacco, and citrus peel continue to resonate, trailing long after each sip.
Bottle count: 186 bottles
About: All of our bourbons are made using Heirloom Red Corn, Heirloom Wheat, and Heirloom Rye, all grown on our farm in South Central Wisconsin, which has been in our family since 1946.
We use a unique, 4-grain mash bill for all our bourbon products: 64% Red Heirloom Corn, 14% Heirloom Glacier Winter Wheat, 14% Heirloom Spooner Rye, and 8% Malted barley. While most bourbons utilize the sweetness of wheat or the spiciness or rye as their ‘flavor grain,’ we decided to use both to create a complex, yet balanced, easy drinking whiskey that both sweet wheat and spicy rye bourbon lovers can reward themselves with together.
