Batch no.4
Proof: 114 proof
Bottled date: 11/7/24
Tasting Notes: Bright, luscious, and fruity - the nose initially draws out sweet candied fruits like strawberry bon bon, mango sorbet, and limoncello. Underneath that are creamy layers of brown sugar syrup, balanced baking spices, soft leather, and pine. The longer it sits in the glass the more maple forward it grows - while still having glimpses back to the fruit of fresh pour.
The palate is lively with toasted citrus peel (think both lemon and orange), and waves of creamy toasted vanilla bean. Freshly cracked peppercorn and ginger nip on the sides of the tongue before warming leather and long lasting charred oak. This batch pivots from the few before it, being less focused on the big spices and more focused on a cohesive, warming toasted experience with accented spice.
The finish blankets the tongue, first with spices then with dry but long saturating red fruits, citrus oils and warming toasted oak.
About the product: The core of this small batch Rye blend is created by sourcing from distilleries in Kentucky and Indiana with a variety of ages, this blend is then secondary aged in toasted barrels. The secondary barrels are blended then bottled once Jonathan and Jennifer find the perfect balance between traditional Rye notes and added complexity / richness from the toasted barrels.
