Barrel: Jamaican Rum FB240-1 "Mermaid w/ a Flamethrower"

Proof: 112 proof

Bottles: 114 bottles

Tasting Notes: Orange peel and charred pineapple. There is brown sugar and a little bit of spice. The rum is nuanced. The funk kicks in towards the back of palate. This keeps a nice balance between the bourbon flavor and the rum finish. It's not overpowered by the rum. The finish is long and adds toasted sugar and rye spice.

About Starlight: Starlight Distillery is a family-owned distillery in Starlight, IN. The distillery started out as a family farm in 1940. It's had multiple evolutions over the years. In 1978, the Huber's started their winery. Then in 2000 the Huber's took the next step and received approval to open the distillery. Starlight is farm-focused and produces many single-origin products. I think they're the only distillery I know that is a working farm, orchard, market, tourist destination, winery, banquet hall, and distillery.
