Mashbill: “Peated” B004: Yellow Corn, Peated Malted Barley, Naked Malted Oats, Honey Malted Barley

Fermentation: Attemperated, 7 days

Cooperage: Char #1, toast profile peat

Tasting Notes: The nose opens heavy with molasses, vanilla, cigar box and oak. While a touch smoked, the key to the nose is finesse and inviting.

The palate hits on herbal and dark fruit on the front, but welcomes more of the peatiness than the nose.
 
Clove, pepper, and licorice all join in while smoked raisins and cocoa powder continue long in the finish.

Made from a mash of at least 25% specialty malted grains, each hand-selected barrel showcases a range of flavor characteristics unique to each recipe, and singular to their Tennessee High Malt style.
