Tasting Notes: On first sniff the nose tries to pull you in. Fresh caramel apple comes to mind - warm caramel sauce with crisp green apple. Theres a complexity of spice in there as well- ginger, clove, white pepper, cinnamon, anise. Dense and inviting.
The palate is long and dry, but filled with concentrated apple cider or apple butter notes and key lime pie - chewy on the palate and filled with all sorts of spice and warm wood notes. Candied mint seem to dance around as well, as if transitioning toward Mojito.
The finish is long and sticky, with heavy toffee and lemon oil now layering in to the notes previously mentioned. The spice intensity continues to build but never take full control. A crescendo of aroma and flavor the entire way.

This 100% rye starts with pure, traditionally grown rye cultivated exclusively for us on the Omlin family farm in Quincy, Washington. We mash and distill the grain in our Woodinville distillery, then truck it back over the Cascade Mountains for barreling and aging in our private barrel houses. Central Washington’s extreme temperature cycles promote the extraction of the oak barrel wood’s natural flavors. Before we cooper the barrel wood, it’s seasoned in open air, rain, wind, sun, and snow for 18 months to soften the wood’s harsh tannins. We deeply toast and heavily char our barrels to enrich the wood’s desirable flavors.
