Mash Bill: 75/13/12 Corn/Rye/Malted Barley

Tasting Notes: Fresh-cut strawberry, canned peaches, and leather. Sweet, rounded, and layered on the nose. The fruit notes transition to tupelo honey with chili peppers. Not in a spicy way, but herbaceous with subtle spice. There are notes of black tea and tobacco the longer it sits in the glass. 

The palate follows the same arc as the notes. There's richness and depth. Peach cobbler with vanilla bean ice cream coats the palate. It has a punch of loose black tea followed by toasted oak and candied almonds. A touch of toasted coconut and dark chocolate balances the back palate.

After the last sip, there's an elegant finish. Structured sweetness to contrast the high proof. It lingers with more notes of sun tea, blackberries, and sweet oak.

Story: Barrel proof, ultra aged bourbon is a rare commodity these days. This is Seelbach's first non-finished release. As a bespoke independent bottler we had to make it special! This low-rye bourbon mash bill highlights the elegance of aged whiskey. Enjoy!
