The toasting process involves heating the inside of the barrel to a specific temperature, which can caramelize the natural sugars in the wood and create new flavors and aromas. This enhances a sweetness to the whiskey. French oak, on the other hand, has a bitterness that is a natural quality of the wood. Our process involves dividing the blend into proprietary ratios and imparting the flavor individually in a finishing vessel. Once each component has the desired amount of toasted or French oak character, the two are blended once again. This double blending process provides an innovative and custom flavor profile where sweetness and bitterness compliment each other.

It has been rated a 95 and awarded Gold at the New York International Spirits Competition

Pursuit Tasting Notes: The nose is met with a flamed orange peel followed by dusted dark chocolate roasted nuts. The chocolate notes continue with a hazelnut spread along with cherry cola on the palate. Familiar notes of toasted oak, cloves, and black pepper are prominent on the finish.

Seelbach's Tasting Notes: The nose begins with warm leathers, fresh from the oven cherry pie, orange marmalade, and nuanced spice of fresh cracked pepper trailing with elegant and layered nuttiness.

The palate is fruitied right away, amaretto forward with clove and pepper nipping the sides of the tongue, before a creamy, brown sugar sweetened finish.

The linger trails long, with plenty of wood spice and plump red fruits.

Kings County Distillery is New York City’s oldest operating whiskey distillery, the first since Prohibition. Founded in 2010, Kings County uses New York grain and traditional distilling equipment to produce whiskey in the Brooklyn Navy Yard, just steps from the former waterfront distillery district and the legendary site of the 1860s Brooklyn Whiskey Wars. Every drop the distillery sells is made in the Brooklyn Navy Yard.
