Blake's Tasting Notes: Blackberry and cherry cobbler. Bright fruits, intense turbinado sugar and baking spice mix nicely. Touches of sweet oak and torched orange peel round out the nose. The first sip coats the palate with oily notes of luxardo cherry and cigar box. It's a flavor bomb and the heat dissipates. Toasted vanilla and apricots start to develop before the return of the oak tannins. The finish is long with some notes of angostura bitters and dried almonds.
Brian's Tasting Notes (water added): The nose is rich and sticky. Maple syrup, sugar cube with a dash of angostura right before being muddled. blackberry cobbler and cherry pie. Soft whips of leather, dried tobacco, and just a touch of oak. A delightfully inviting nose.
The palate is chewy and creamy from the rip. Bright fruits, toasted and candied orange peel, vanilla bean, luxurious leather, candied cocoa nib, and lots of lovely oak.
Spice comes in towards the end of the sips, but well controlled and not without custardy sweetness and plenty of lasting oak.
The Story: Seelbach's is dedicated to 'unlocking craft spirits.' As a bespoke independent bottler, we embrace patience, waiting for that special whiskey to cross our path. Seelbach's Double Oaked starts with a rich high-rye bourbon. The additional aging in in new oak adds depth and complexity. The result is a robust whiskey. Its prominent flavor notes are dark chocolate, toasted sugar and oak. Enjoy!
