Age: Blend of 9 & 5 Year bourbon

Mash Bill: 51/45/4 Corn/Wheat/Malted barley

Proof: 109.3 proof

Finish: Medium Plus Toasted, Char 1 barrel aged Steen's Louisiana Cane Syrup for 2-months. Bourbon was then finished in this barrel for an additional 4-months

Tasting Notes: The nose is rich and decadent and still  carries beautiful fruitiness - white grape, peach blossom tea, jasmine, dark cherries, wafts of cacao dust and freshly baked apple pie.

The palate takes all the notes from the palate and adds creaminess, elegance, and a bit of more depth and spice. An initial wave of barrel char on the front palate followed by creme brûlée meets whipped chocolate pudding meets black walnut bitters, clove, and allspice.
 
The finish is softly trailing, but long as is fades. It continues with this slightly smoked vanilla cream puff, undoubtedly from the Steen's syrup, and revisits this honeysuckle and jasmine tea element that linger beautifully with smoky baking spice notes well after the sip is finished.

Its nose greets you with fruity and floral notes of white grapes, pear tart, jasmine, and oak, while the palate unfolds layers of butternut squash, brown butter, baking spices, and Tarte Tatin. The soft, rounded alcohol profile—enhanced by New Orleans’ humid climate—leads to a warm, lingering finish. Marrying the storied histories of Bourbon and French Cognac, each bottle is a tribute to the Honey Island Swamp’s enduring legacy.
