Mash Bill: 60/36/4 Corn/Rye/Malted Barley

Bottle Count: 676 bottles

Tasting Notes: Golden raisins, toasted baking spice and cherries jubilee. The nose is big bold spice. A powerhouse of a double digit age statement and high rye bourbon. The palate mirrors the nose with a new layer of toasted coconut and spicy plums. I love the spice level on this bourbon! This can often be lost to oak notes in older whiskey. Pecans and pepper round out the palate. The finish is a delicious mix of toasted almonds and black tea. This moves to peach sun tea as it lingers.

While the nose is great, this comes alive on the palate. Loads of toffee, black tea, cloves, dried fig and custard. It's a balancing act you don't often see in bourbon aged this long. The sweetness is still there. The oak and tannins play nicely while showcasing dried fruit and herbal notes. All of this leads to a long, cedar box and aged tobacco finish.

The Story:  We are back with Seelbach's 10-year. This time, instead of Kentucky, we are dipping into barrels from Indiana. These barrels aged a majority of their 10 years in the Pacific Northwest. The mild climate and high rye mash bill creates something incredible! Tasting these barrels, we noted white tea, lavender, and soft fruits. The notes were only enhanced once we started blending. The palate hits a note of dried figs and custard that is my favorite. While we've picked dozens of barrels in this age, it was a blast to have free rein on the blending. And I believe we created something special for Seelbach's Private Reserve.
