12 Days of Whiskey is our favorite stretch of the year at Seelbachâs. Every drop is intentional: from unique finds, special releases, and the return of some fan-favorite bottles. For 2025 we think weâve outdone ourselves. Whether youâre buying for yourself or checking someone off your list, this lineup has something for everyone.

This next drop brings back a true fan favorite: Starlightâs Blueberry Liqueur Finish, plus a fresh restock of the popular Honey Reserve.

A full year older than our previous pick, these unique Starlight barrels are always wildly popular around the holidays. While Starlightâs finishes shine across the board, Blueberry Liqueur has become a surprise fan favorite, an ideal dessert pour or after-dinner sipper. This barrel takes everything we loved in the last two and turns it up, delivering even more rich, syrupy depth, no doubt due to its 18 month finishing time.
Dense and grapey, the nose carries a sweetness and intensity reminiscent of aged rum or brandy, perfumed yet approachable with salted caramel and Earl Grey tea.
The palate is playful and sugar-coated, with dark chocolate covered blueberry and açaĂ, hints of dried rose, and candied orange peel like a rich, simple Old Fashioned.
The finish stays sugary and jammy, with a nip of white pepper before trailing into mixed red and purple fruits in a long, sweet finish.
Next is the return of the previously sold out Honey Reserve, a bourbon that is truly farm-to-bottle. Starlight's Honey Reserve first aged in new American white oak, then finished for 4â12 months in fire-charred and toasted casks that previously held Starlightâs own estate-harvested honey. These hives, pollinated by the farmâs orchards and wildflowers, leave behind a subtle sweetness that laces through layers of oak, spice, and fruit. The result is a whiskey that connects field, hive, and barrel, a limited release where authenticity, heritage, and innovation meet in every pour.

On the nose, delicate notes of fresh orchard fruits, and sweet honey rise above the layers of vanilla and toasted oak. The palate is elevated by flavors of golden apple and warm baking spice. The finish is long and harmonious, leaving traces of honeyed spice and barrel-aged warmth.
