After over a year, we are back with another Pursuit United Double Oaked Bourbon 2-barrel blend.

In October, Ryan and I went back to the drawing board on another Double Oaked Bourbon Blend. While I'm prone to the ryes, with all the various profiles they have cooking I knew exactly where I wanted to start. The tobacco staves tend to give depth, leather, and oak but can also be shaped uniquely with the addition of something to balance. We've had great success with the Seguin Moreau staves in our rye blends, so they became a key focus here. We began narrowing into a few trials with one in particular standing out, with Ryan calling it a "show-stopper." This blend builds on the core Double Oaked profile you already love, with more oak, more cherry cola, and richer tannins reminiscent of the Kelvin barrel influence we’re so fond of.
The nose is dense and softly fragrant with gobs of caramel, layers of nougat, and pecan pie. As it rests, it develops a bit more creamy vanilla, almost like marshmallow fluff. There is just a kiss of smoke to finish it off.
The palate rewards big sips, with more to offer the wider the sip. It begins with butterscotch sweetness but quickly shifts to candied pecans, semi-sweet chocolate, Cabernet richness, and charred oak. This pour builds and expands as you sit with it, becoming much more viscous than its 108 proof would suggest.
The finish is rich with heavy barrel influence as thick brown sugar syrup, chocolate, vanilla cream, and plenty of dried cherry linger on and on.
