12 Days of Whiskey is our favorite stretch of the year at Seelbach’s. Every drop is intentional: from unique finds, special releases, and the return of some fan-favorite bottles. For 2025 we think we’ve outdone ourselves. Whether you’re buying for yourself or checking someone off your list, this lineup has something for everyone.
This next drop revisits one of our favorite producers to pick from - Nashville Barrel Co's Maple Finished 9-year Bourbon.

I love picking barrels from Nashville Barrel Co., so when the opportunity came to feature one for the 12 Days of Whiskey, I knew we had to do something unique. NBC has probably done fewer than ten maple finished single barrels, and this one is the very first from Kentucky. If you tried our previous 7-year “Annie Anne” release, you will recognize that familiar base profile. The maple here adds just a kiss of sweetness, turning this pour into a cinnamon sugar old fashioned, perfect for the holiday season. It is ideal for someone who enjoys a bit of age on their bourbon and a finishing touch that stays subtle and balanced.
The nose smells like the perfect old fashioned if it were made with a cinnamon sugar simple syrup. Beyond that are layers of nougat, maraschino cherry, a soft touch of antique leather, and mature oak beneath what feels like a stand of saturated mixed berries.
The palate is decadent and rounded, no doubt from that 18-month finishing softening any potential harsh notes. It is sweet, a bit earthy, and presents well aged oak and a splash of peach iced tea in a beautiful and approachable way, while still packing a punch at 115 proof.
The finish is plush, continuing to get sweeter with each sip but never becoming too sweet. It brings candied orange peel, a move toward syrupy Luxardo cherry, and a consistent presence of beautiful sweet oak. This is certainly a holiday treat.
