Still Austin Red Corn Bourbon Bottled-In-Bond
|The Still Austin Bottled-in-Bond Series was one of the best things in craft whiskey last year, so imagine our excitement when we heard we'd be seeing a return of their Red Corn Bottled-in-Bond again with another year of age on it. We are huge fans of this Texas distillery, showcasing the flavors of Texas grains and beautiful blending touch from none other than Nancy Fraley. Today we are releasing the fifth in the Still Austin Seasonal Bottled in Bond Series. Four limited release whiskeys distilled to capture the ingredients, flavors and themes of the seasons from which they were inspired. Spoiler alert - it's incredibly good.
For each label, internationally acclaimed artist Marc Burckhardt—the painter responsible for the labels on their flagship spirits—has used images to conjure the indescribable moods of summer, fall, winter and spring, selecting a different animal and color to highlight each season.
For this Summer 2024 release—represented by the heat-loving snake and cactus—we combined the robust nuttiness of Jimmy Red corn with the sweet spice of rye. This release was a fan favorite when it was released last year, and with an additional year of aging, it might be even better.
What's unique about this Texas distillery is the use of the slow water reduction process. This is done in brandy or rum - instead of waiting until a barrel is dumped to proof it down, they slowly add water to the barrels over time. This process allows the more subtle flavors to remain intact. It also increases the extraction of caramel and vanilla notes. These compounds are more soluble in water.

The nose is explosive and expressive right away - candied grapefruit, stewed strawberries, gobs of caramel, a pinch of nutmeg and cinnamon, and a hint of smoked oak.
The palate is even more expressive than the nose - juicy grape, raspberry, and strawberry, with barrel aged maple syrup, orange cream soda, and a slight mint-tea linger.
The finish is creamy vanilla, saturated dark fruits, lingering pepper, and a pleasant touch of spiced oak.
