We’re thrilled to welcome Old Soul back to Seelbach’s! This brand first caught our attention years ago, and since then we’ve had the pleasure of sharing several of their single barrels and their beloved TINTYPE series with you. Old Soul has always been a bit of a sleeper bottle—but ask anyone who’s tried it, and you’ll hear the same thing: it never disappoints. That’s why we couldn’t be more excited to offer another Seelbach’s single barrel this year.
 
Founded in 2010, Cathead Distillery made history as Mississippi’s first legal distillery, started by friends (and blues fans) Austin Evans and Richard Patrick. From their home in downtown Jackson, they’ve built a reputation not only for their gins and vodkas, but also for their standout bourbon line, Old Soul.
 
This release is a 7 year, 7 month single barrel, distilled in Indiana with a mash bill of 75% corn, 21% rye, and 4% malted barley. At 122 proof, it’s dangerously drinkable—bold, balanced, and ready to surprise anyone who thinks they know what this Mississippi brand is all about.


 At 122 proof, the nose is surprisingly composed. Maraschino cherry juice and toffee lead the way, layered with honey and a lift of citrus oil. Given time, it deepens into a creamier profile, drawing out leather and oak.
 
On the palate, the first impression is how silky it feels. Citrus brightness sets the tone before salted honey and maple move in through the mid-palate. As it lingers, mixed berries and even a touch of raspberry iced tea keep it vibrant.
 
The finish finally lets the proof show, wrapping into a warm Kentucky Hug. Spiced cherry and plum carry the weight, supported by toasted vanilla, brown sugar, and a dusting of cocoa that leaves a lasting impression.
