A Rare Sakura Finished Bourbon from Starlight Distillery

Starlight Distillery has never been afraid to explore how different types of oak can reshape a familiar bourbon profile. We’ve seen that through toasted barrels, wine finishes, and most recently with the return of its award-winning Mizunara Reserve. Today, Starlight takes that experimentation in a new direction with Sakura Reserve.

Starlight Sakura Reserve Bourbon represents a truly singular expression within the distillery’s whiskey portfolio, bridging American craft distilling with the beauty of Japanese Sakura wood. This limited release begins with a two-barrel blend of eight-year-old Starlight Bourbon, finished in rare Japanese Sakura wood and bottled at 118 proof.

Sakura, commonly associated with the Japanese cherry blossom, is an uncommon finishing wood that adds delicate floral aromatics, soft sweetness, and subtle cherry notes without overwhelming the mature bourbon underneath. The result is a bourbon with both substance and elegance, pairing the bold structure of mature Starlight Bourbon with the unmistakable character of Sakura.

The nose is gently inviting, with iris, vanilla bean, brown sugar syrup, and sweet oak. Once you let it rest for about ten minutes, you’ll notice violet jam, lavender, and grape notes indicating it’s ready to dive into.

The palate is best given a few minutes to open, and if you do, you’re rewarded with vibrant yet delicate layers of cherry limeade and a pleasing trail of sweet spices. The more you sip, the more layered and syrupy it grows, revealing more floral-kissed grape juice saturation with a little blackberry tingle.

The finish is long and layered. The spice picks up a bit in intensity, as do the darker, thicker blue and purple fruit notes, followed by a longer linger of candied pecans and cola concentrate.
