Starlight Estate Cask Series
Age: 5.5 years old
Proof: 113.4 proof
Mash Bill: Blend of Starlight's 3-grain and 4-grain mash bills; 60/20/20 Corn/Rye/Malted barley; 51/9/20/20 Corn/Wheat/Rye/Malted barley
Finish: 12-months Starlight (Huber Winery) Blueberry Port barrel that had been used for 9-years in Blueberry Port production
Bottle count: 318 bottles
Tasting Notes: With rest in the glass this noses like a vintage brandy - rich, romantic, perfumed dark fruits, soft leather, dark milk chocolate, and Earl Grey tea.
The palate explores similar unique qualities - cinnamon eclair, acai, blueberry, and rose infused chocolate, and again with those bergamot-forward notes of Earl Grey tea.
While the finish carries a mix of dry spices (think white pepper and allspice) and dried oak on the front end, the longer finish saturates more like a red wine on the tongue leaving a satisfying trail of red and purple fruits mixed with lasting dark chocolate.
Story: I get it. You see "Blueberry Port Finished" and want to close the email. But trust me, this is one of the best Starlight barrels we’ve had all year. The Hubers start with a Blueberry Port made in-house with fresh Indiana-grown blueberries. Ripened to perfection, the end results is an intense Blueberry Dessert Wine. Excellent for finishing a sweet and spicy bourbon.
The blueberry port might seem like a gimmick, but it shines. The flavors blend beautifully in the finish. This showcases what Starlight does best. Finished for 3-8 months in a Blueberry Port barrel, this falls closer to that amaro, digestif, after-dinner sipper category... and it's fantastic.
