Tasting Notes: While 12 years old, the age is masked by sweeter notes of brown sugar, caramel sauce, sweet leather, and pipe tobacco. Lightly perfumed with red fruits and citrus, the nose carries a creamy vanilla Coke that transitions into whipped cream with a maraschino cherry on top.

One bottle I loved years ago was a low-proof, cask-strength single barrel from Smooth Ambler. I should've grabbed every bottle I could before the hype caught up to it. In today's whiskey world, high-proof and hazmat releases reign supreme. But I love a cask-strength release at an approachable proof point.

 While there's no shortage of Indiana bourbons to try for Seelbach's, there are always some that stand out, and that was the case the first time I tried Onyx & Amber. 12-years old, 107 proof at cask strength, and under a 144 bottle yield... this is the perfect storm we love chasing.
