Meet Seelbach's New Flagship Bourbon

This release is the product of an observation over the last 12 months. I recently had a friend over that brought his own bourbon because he didn't want anything too "high proof." Don't get me wrong, I love cask strength whiskey. But, more and more I find myself reaching for bottles below 100 proof. There's only one issue. A majority of the time they taste watered down and flat. Very different from lower proof releases 20-30 years ago. That put me on a journey!

Seelbach's Classic is a 7-year 8-month Kentucky Straight Bourbon at 99 proof. It drinks with all of the flavor of a cask strength whiskey. But, at a lower proof. I was able to go through our barrels and hand select barrels at a lower cask strength. From there, we added water slowly to the barrel. The addition of water to the barrels improves the flavor integration of the water and whiskey. The result? A bourbon rich with notes of toasted oak, caramel and vanilla bean ice cream. A profile that enthusiasts and new comers to the bourbon world will both enjoy. What do I love about it most? I don't think there are many bottles that can hang with it at a $40 price tag!
