Tasting Notes: Raw honey, thick caramel sauce, soft honey graham, tiramisu, gentle elegant spice. This is a sweet and desserty driven nose, yet still has some underlying dried fruit notes and spice but gives zero indication of its proof.

The palate is juicy, multilayered, and continually changing - giving up moments of rich, plump vanilla cake with salted caramel icing, moments of rich, deep charred oak and sugared spices, and moments of rich waves of moist black forest cake. It has the power of its 131 but drinks so much easier than that.

The finish is long, oak-filled, and has remnants of all the directions it pulled on the palate - cherries and chocolate cake, black raspberry chip ice cream, cake donuts, and lingering tiramisu.

The Story: We had an incredible time recently at Nashville Barrel Company. With so many newer brands coming into the market each year it can be easy to look at whatever might be flashy or new, but NBC really does continue to put out some of the best products of any NDP we have here at Seelbach's. 

We tasted through 42 barrels in total  - older MGP bourbons, older MGP rye, Kelvin MGP bourbons, Kevin Tennessee bourbons, a myriad of Kentucky Bourbons, and even Canadian Whiskey. In the end, we picked 11 barrels that really do run the gamut when it comes to flavor profiles in whiskey. We decided to break them down into 4 release, with this last release being an all Kentucky release and a return the Nashtucky label we've not revisited in s0me time. 

We loved our 55xx barrel last year, but this one seems to pack so much more flavor. As much as I loved it during the pick, this is an early lead for one of my favorite bottles so far this year.
