Tasting Notes: The nose starts with fresh pear, honey dipped green apple, and dried apricot, before subtle Sherry-like tannins, soft vanilla custard, buttered toast, and gently peated barley grain.

The palate follows much like the nose, soft and buttery but picks up some toasted wood sugars and oak in the finish.

This one weaves into a lot of whiskey categories, and continues a slow development of flavors each sip you take with the baking spice and toasted wood continuing to amplify.

About Finger Lakes Distilling: Finger Lakes Distilling is located in the Finger Lakes region of New York State. The region is rich in agriculture. Finger Lakes Distilling takes full advantage. Their corn, rye, and barley are sourced from local farms. The distillery design is inspired by Scottish whisky distilleries. It is a beautiful building with even better views of the Seneca lake from the distillery deck.

Barrel entry proof is an often overlooked part of the whiskey making process. Finger Lakes Distilling whiskey enters the barrel at 100 proof (most distilleries use 125 proof). This allows different flavors to develop during the aging process. Because of the higher water content of the whiskey more of the woods sugars are broken down. The wood sugars a created by charring the barrel. This sweetness is evident in the flavor profile.
