As it sits, brighter notes of grapefruit peel emerge alongside cocoa, adding contrast and depth without overwhelming the initial delicacy.

On the palate, the whiskey broadens and becomes more indulgent. Strawberry jam and tres leches cake bring a rich, dessert-like creaminess, layered with caramel candies and the roasted bitterness of Vietnamese coffee. A flash of flamed orange peel cuts through the sweetness, adding warmth and balance as the flavors build.

The finish lingers at a measured pace, evolving rather than fading. Cherry cobbler and caramelized sugar carry through first, joined by an unexpected touch of matcha green tea and white pepper that adds structure and lift. A subtle bubblegum note hangs on at the very end, leaving a playful sweetness long after the last sip.

This Winter release was a fan favorite when it was released last year, and with an additional year of aging, it might be even better. Represented by the winter crow, we employed blue corn to invoke the endless winter night sky.

Tasting Notes: Sweet vanilla opens the nose alongside a sweep of orchard fruits. Stewed green apples move into crisp red apple and even a juicy peach, with black raspberry and a soft hint of leather lingering on.

The palate is full and coating, with leather surprisingly arriving first. A twist of caramel and barrel char follows before it settles into cooked fruits, a touch of allspice, candied lemon, brown sugar, and plenty of sweet oak.

The finish is a blend of spice-caressed toffee and cocoa powder, with raspberry and sweet oak continuing through a creamy lemon meringue note that lingers the longest.

Story: My dad used to tell me stories about growing up in western Kentucky and working the farms. That wasn’t my experience—but a few years ago, it all came full circle when I saw a truckload of Beyke Farms corn being delivered to a distillery. It might’ve been a small role, but knowing my family had a hand in the whiskey industry was fascinating.

Fast forward to today: working with Seelbach’s has introduced me to whiskeys from all across the U.S., and one thing I’ve become obsessed with is a specific heirloom grain—blue corn.

I’m excited to introduce a well-aged, well-crafted blue corn whiskey, made right here in Kentucky.
