Tasting Notes: Nose: Heady, ripe stone fruits off the bat, namely white peach and Rainier cherry. There are fresh vegetal aromas of sugar snap pea and sorrel as they transition into more developed herbal notes of gentian and dill. The oak asserts itself in the form of maple sap, pistachio, and wintergreen.
Palate: Fresh, almost crisp, as tart apple and meyer lemon take the stage. Earthier hues emerge and expand to include oatmeal, pumpkin bread and clove. The texture has a heavy and oily quality, its mouthfeel enhanced by a lightly grippy astringency and rich, sweet molasses.
Finish: Pumpkin pie builds over time, adding in layers of traditional baking spices. Red clover, sunflower seed, and roasted chestnut lend greater complexity.
