Wilderness Trail | Wheated Bourbon
|Since our first barrel in 2019, we've loved Wilderness Trail whiskey, and is one of the brands we love talking about here at Seelbach’s. That's probably why we've picked 30+ barrels over the years. I remember tasting some of the first bourbon from Dr. Pat Heist and Shane Baker back in 2018. It was special. Their expansion and subsequent sale to Campari has been impressive to watch. Unlike a lot of the brands who offer sour mash whiskey, Wilderness Trail is strictly sweet mash, meaning they start with entirely fresh ingredient with each batch. That results in really clean, nuanced profiles - especially in their wheated bourbon like we have today.
It's been a year and a half since our last private barrel, and today that changes.

- The nose leads with red fruit roll-ups, spiced red apple, ground baking spices (nutmeg specifically) and hot chocolate powder, soft citrus peel, raw almond, and slightly funky earthiness.
- The palate leads with dark chocolate, smokey vanilla, oak spice, tobacco, tar cherry, nutmeg, clove, and hints of leather on the finish.
- The finish is long with cohesive chocolate and leather, and smoked vanilla bean.
