Still Austin High Rye & Blue Corn Bottled-In-Bond
|If you are new to Still Austin, you are in luck. We are huge fans of this Texas distillery, showcasing the flavors of Texas grains and beautiful blending touch from none other than Nancy Fraley. Today we are releasing the next two in the Still Austin Seasonal Bottled in Bond Series. Four limited release whiskeys distilled to capture the ingredients, flavors and themes of the seasons from which they were inspired.
For each label, internationally acclaimed artist Marc Burckhardt—the painter responsible for the labels on their flagship spirits—has used images to conjure the indescribable moods of summer, fall, winter and spring, selecting a different animal and color to highlight each season. The Red Corn Summer release sold out incredibly fast, and with good reason. It's hard to believe with how much we loved it that the releases could keep getting better, but they do.
For the Fall 2023 release—represented by the golden stallion, the high-rye content calls to mind the crisp fall air, while the use of white corn conjures visions of autumn fields—and the spirit’s deep amber coloring recalls the red and gold leaves of the season.
For the Winter 2023 release—symbolized by the winter crow, they employed blue corn to invoke the endless winter night sky. The spirit’s deep, oaky flavor and hints of butterscotch and cinnamon make this the perfect bourbon for sipping by the fire.
What's unique about this Texas distillery is the use of the slow water reduction process. This is done in brandy or rum - instead of waiting until a barrel is dumped to proof it down, they slowly add water to the barrels over time. This process allows the more subtle flavors to remain intact. It also increases the extraction of caramel and vanilla notes. These compounds are more soluble in water.
